I'm not sure what else to call these.... maybe "Applaisian Nut Cookies"? Or "Apple Nutty Mounds"? Hmmmm think I'll stick to simple "Apple Cookies" yes....
What you'll need:
2 Apples
1 C oat flour (ground oats)
1/2 Tsp Cinnamon
1C Pecans
1C Cashews
1C Raisins
If you have an apple peeler corer slicer thingy then awesome *high five* it saves soooo much time, and it's really easy to clean up, that is...... only if you wash it immediately.
Directions at bottom.
It's just like a slinky! seriously.
Pecans, Cashews, and Raisins all getting along with each other.
Apples cut into small cubes
Ground nut and raisin mixture sprinkled over apple pieces.
Oat flour and cinnamon added to the mix also.
Okay......... I'm no genius, but I'm pretty sure there aren't suppose to be chunks of apple rolled in oat flour, and crumbles of raisins and nuts, it's suppose to be a mixture that I can "scoop" cookies out of ..... D:

Add lots of dark chocolate so it sticks together better :D, hmmm no....

Yay! Splendid blended apples. yes quite a clever name, I know. ;)
Perfect! when I was mixing it, it went "squish squish squish" like rubber boots do in the mud, I know I shouldn't compare cookie dough mix stuff to mud, but I was so glad that it all combined well, and therefore that noise was music to my ears. :P
I spooned the cookies onto a cookie sheet lined with parchment paper, and baked them at 350 degrees for 15 minutes.
They smelled good :), but...... they tasted even better!! :D
I feel pretty successful, I'm not going to say (these are really good for a "healthy cookie"), these are really good. <-- period
Yes they're good, even without butter, flour, and sugar. though..... chocolate would be nice... have I mentioned that? oh I did earlier, I didn't mention the idea of just coating these in chocolate, well now I have....
Been kinda compulsive today, I'll be carrying on a normal conversation then I'll be like "CHOCOLATE!" oh where were we.......
These don't have chocolate in them "obviously", but they might in the future.
You guys probably think I like melt hershey bars in a glass and drink that for breakfast or something, well I don't......... I just eat some form of chocolate every. single. day. and so I'm just adjusting, in a good way though. :)
Directions:
1. Wash, peel, and cut apples into chunks
2. Put cashews, pecans, and raisins in your blender and pulse it a few times, until it sticks together pretty well.
3. Remove nut and raisin mixture from your blender and place in a large bowl.
4. Put apple chunks into your blender and blend until you have very very small chunks.
5. Mix the apple mush with your nut and raisin mixture, and stir in the oat flour with cinnamon.
6. Scoop cookies onto a cookie sheet lined with parchment paper
7. Bake at 350 degrees for 15 minutes. ~ Makes roughly 25 cookies
