White Chocolate Cheesecake

Hey you guys!! Here's a wonderful cheesecake recipe I made recently, It's called a White Chocolate Cheesecake, it actually has white chocolate in the batter!! something else that makes this different from an original plain cheesecake is that the crust is like a shortbread cookie as opposed to the graham cracker crust.

Shortbread Crust:

1 stick Butter
1/4 C Sugar
1/2 Tsp Vanilla Extract
1 C Flour

Beat Butter, Sugar and Vanilla in a mixing bowl until fluffy, gradually add flour until well mixed.

 Springform Pan
 Shortbread Crust

After you've made the crust and pressed it into your pan you need to bake it at 325 degrees for 20-25 minutes or until it's slightly brown

While that's baking in the oven you can whip up your cheesecake batter right quick :)

White Chocolate Cheesecake:

16 oz philadelphia cream cheese
1/2 C sugar
1 Tsp Vanilla Extract
6 Squares white chocolate
2 Eggs

Beat cream cheese, sugar and vanilla extract until smooth, add melted chocolate, mix well, add eggs, pour into your slightly browned crust.

Bake at 325 degrees for 25-30 mins or until center is almost set yet still slightly "shaky"

I melted white chocolate chips and drizzled it over my cheesecake to make it look fancy. :)

This cheesecake lasted no time around our house, it's definitely a favorite around here. if you love cheesecake, I hope you'll give this recipe a try!!
