This recipe is quick and super easy, anyone can make it :). And even though it's dairy free the texture is still great, it's kinda like banana bread only softer.
Banana Snack Cake:
1 2/3 C Flour
1 Tsp Baking Soda
1 C Packed Brown Sugar
1/2 C Water
1 Banana (1/3 C mashed)
1/3 C Vegetable Oil
1/2 Tsp Banana Extract
In a bowl combine flour and baking soda, In a different bowl, whisk all other ingredients. then stir in dry ingredients until moistened. pour into a greased 8-in square baking dish. Bake at 350 degrees for 25-30 minutes. (mine took 25, do not overbake!!)

After the pan cooled I cut them out and dusted the tops with powdered sugar.
These taste just like banana bread but don't take quite so long, the texture is a little bit softer than banana bread though, which is nice. :)

Your cake looks so moist and delicious! I've never used banana extract before, I'll have to look for it next time I'm grocery shopping! This looks yummy!
