really though, I get hungry, make these, problem solved, haha.
I threw in a few chocolate chips in these, gives it some sweetness, and come on, who doesn't like chocolate for breakfast?!?!
Oatmeal Pancake Recipe: (serves 4)
1/2 C White Flour
1/2 C Oat Flour (Ground Oats)
2 Tsp Baking Powder
1/2 Tsp Cinnamon
1 C Milk (I used unsweetened almond)
2 Tbs oil (I used organic extra virgin coconut oil)
1 Tbs vanilla extract
Optional 1/2C Chocolate Chips. :)
Optional 1/4 C Oats (to add texture/crunch)
Note* You may need to add more milk, depends on the consistency you're going for.
If you add chocolate chips you can use 2 Tbs of sugar instead of 1/4 C
If you add Oats don't make your batter and let it sit for a while, the oats won't be crunchy if you let them sit with the wet ingredients.
You know, it's kinda funny, I feel like these are "healthy pancakes" of some sort, but really, when you smother anything in butter and cover with syrup, how can you call it healthy?? hmm I'll have to think about that...
I make a blueberry sauce which is delicious, I've used it on these pancakes actually, it's quite good, and I don't feel so bad about topping these pancakes with slightly sweetened blueberries. :)
anywho, just felt like sharing a little love with you guys, hope y'all try these out, if they don't turn out how you really hoped for, try messing around with the recipe according to your taste. :)
