My Brownie Recipe (Revised)

Okay you guys, I made a brownie recipe a while ago, and it was really good! well... it tasted really good, wasn't all that great as far as health was concerned. So I took my old recipe and revised it a bit to make it.......... well not as bad for health, but still taste just as great.

I used 25% less sugar, ditched the salt, and instead of using butter, I used coconut oil. Yep that's it for now, I will try making more changes as time goes by.

Thinking of using some all natural applesauce, less sugar, whole wheat flour, or maybe coconut flour and almond meal.....

Perfect Brownie Recipe

3/4C Sugar
1/2C Flour
1/3C Baking Cocoa
1TBS Dark Cocoa (Optional)
1/2Tsp Baking Powder

1/2C Coconut Oil (Melted) (I Used Organic Extra Virgin)
2 Eggs
1/2Tsp Vanilla Extract

Mix all dry ingredients together, add wet ingredients one at a time. pour into an 8X8 baking pan lined with aluminum foil and greased.
Bake at 350 degrees for about 15-20 minutes.

Icing Recipe:

1 1/2C Powdered Sugar
3 TBS Baking Cocoa
1 TSP Dark Cocoa (Optional)
3TBS Coconut Oil (Melted)
3 TBS Warm Water (I know it takes forever for the water to get warm coming from the faucet, but seriously, just wait. :P)

Mix dry ingredients, add oil stir well (will be somewhat crumbly) then add WARM water. that's it.....

My dry ingredients
Added the Coconut Oil
Stirring in the Eggs
Did you notice I'm not using a mixer? yup, this can be done simply with any bowl and a spatula, or spoon........ or whisk. hmmm anything really. well no.... not a potato peeler, I don't think that'd work out.
Got out an 8X8 inch pan lined it with aluminum foil and greased.
Ready for the oven.
The Icing

GOOD GOLLY MISS MOLLY!! I so want a piece right now, like.... yeah right now. *sigh*

I actually like these brownies better than my original recipe, mhmmm I said it, and I mean it.

I could taste the coconut in these, and I really liked that. now.... if you don't like coconut, then you probably won't like these :(, but you could use some other oil in place of the coconut, just experiment at your own risk hahahaha.

Seriously get in your kitchen and whip up something you've never made before, it doesn't have to be complicated to be great. but you will definitely have to go through some trial and error to find what you're searching for.

Made with Love,
Molly

  1. Molly,
I agree, these were so good and the coconut flavor that came through from the oil made them extra special, then again, one of my favorite candy bars is Mounds, so it's no wonder that I really enjoy these brownies.
    Love you,
    Your Mama
