I wanted to share this delicious recipe with you fellow bloggers, it's super simple and it bakes in the oven so it's pretty foolproof.
I sure have missed blogging, I've just made zero effort to post anything.... it's sad really. I cook every. single. day. So I will try sharing my recipes here on my blog.
Here's the lamb all seasoned up and ready to go in the fridge to marinate for a few hours, I don't think this step is necessary, but I like to think it helps with the flavoring. ;)
Recipe
- 2 Lamb chops
- 1 Teaspoon salt
- 1 Teaspoon pepper
- 1 Teaspoon thyme, ground
- 1 Teaspoon crushed rosemary
- 1 Teaspoon minced garlic
- 1 Tablespoon olive oil (enough to drizzle)
- Some lemon juice
- Bake at 400 degrees for about 16 minutes (well done)
Rub seasoning all over both sides of the lamb chops, place them in a dish or ziplock bag and refrigerate for a few hours until dinner time or overnight, again this step isn't necessary, but usually if I'm cooking lamb I have enough time to prepare it this way.
After the meat marinated for about 5 hours I put a cast iron skillet over medium heat, covered the bottom in olive oil, and waited until it was very hot before adding the meat. I seared each side for roughly 2-3 minutes.
After they browned up some I put the cast iron skillet in the oven for about 16 minutes at 400 degrees, this cooks the lamb to well done, if you want them more on the medium/rare side I'd only cook them about 10 minutes and check on them.
I think the rosemary and thyme really bring this dish together, this isn't a dish I'd make often, but I do enjoy cooking different meals such as this one.
