Chicken Penne Pasta W/ Mini Onion Walnut Muffins




Here's a dish that's pretty quick and really tasty, didn't have any leftovers!! Everyone in my family enjoyed it.


Chicken Penne Pasta:

1 1/2 lbs of boneless chicken breast
1/2 C Onion
1/2 C Green Bell Pepper
1/2 C Red Bell Pepper
2 Tsp Garlic
2 C Uncooked Penne Pasta
1 Can (14 OZ) Rotel Tomato
2 C Mozzarella Cheese

Cook chicken until completely done, set aside. In a large pan saute the onion and peppers in some olive oil until tender, add garlic and rotel tomato.

Cook pasta for about 8-11 minutes (or according to your package directions)

Combine chicken, sauteed veggies and pasta all in a large pan, transfer half this mixture into a greased 2-qt baking dish, sprinkle half of the cheese, and repeat layer.

Cover and bake at 350 degrees for 30 minutes, uncover and bake 10-15 minutes longer.

I mixed the cooked chicken with my sauteed onion and bell pepper,

Here I added the pasta to the chicken mixture and also put a can of rotel tomatoes in it for a little more flavor

Writing up this post makes me want this dish again! it's soo yummy, definitely one of the best pasta dishes I've ever had, and those muffins are wonderful!! they're surprisingly sweet from the onion that's in them, and the walnuts add texture as well :).
